FAQ

Can I make Bitter Gourd – Yogurt Pachadi with sour yogurt?

The recipe specifically uses thick yogurt that is not sour. Since bitter gourd already has a strong bitter note, non-sour yogurt helps keep the pachadi balanced and cooling. A very sour yogurt can make the dish sharper and may overpower the coconut, cumin, shallot, ginger, and curry leaf flavors.

Why is the bitter gourd fried until dark?

Thankam’s method begins by heating two small spoons of coconut oil and frying the thinly sliced bitter gourd until dark. This step gives the pachadi its characteristic flavor and texture. The fried bitter gourd is then set aside to drain the oil before it is mixed back into the cooled yogurt base.

When should yogurt be added to this pachadi?

Yogurt should be added only after the cooked mixture cools down. The recipe brings the coconut-cumin paste and chopped ingredients to a boil once, removes them from heat, and then waits for cooling. After that, thick yogurt is added and mixed well before the fried bitter gourd is folded in.

What is ground into the smooth paste?

The third ingredient is ground into a smooth paste: grated coconut – 2 big spoons and cumin seeds – one pinch. This paste is later mixed with a quarter cup of water, stirred into the sautéed ingredients, brought to a boil once, and removed from heat before yogurt is added.

Which ingredients give this yogurt pachadi its aroma?

The aroma comes from coconut oil, mustard seeds, dried red chili, chopped shallots, chopped green chili, ginger sliced lengthwise, and curry leaves. These ingredients are sautéed before the coconut and cumin paste is added. The fried bitter gourd and final sprinkled fried ingredients add more flavor when served.
